Awesome Garlic Roasted Mushrooms

An easy and delicious side dish recipe: roasted mushrooms with garlic, parmesan cheese, and balsamic vinegar. Low carb, keto, and gluten free.

Yield: 3 side servings

  • 1 pound cremini or baby bella mushrooms
  • 10 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons finely grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • chopped fresh parsley for serving

  1. Preheat the oven to 400 F. Prepare a baking sheet lined with foil.
  2. In a large mixing bowl, toss mushrooms, garlic, olive oil, oregano, salt, and pepper until well-mixed.
  3. Spread them out in a single layer on the baking sheet.
  4. Bake at 400 F for 15 minutes.
  5. Drizzle balsamic vinegar on top of the mushrooms, and toss or flip the mushrooms. Evenly sprinkle parmesan cheese on top of them.
  6. Bake for another 10 minutes, or until the mushrooms are tender and the balsamic vinegar looks “baked in.” It’s fine if some of the balsamic vinegar on the foil starts to blacken.
  7. Top with chopped fresh parsley, and serve.
