No-Bake Chunky Monkey Cake is a dessert with layers of graham crackers, banana, chocolate pudding and vanilla pudding.

  • 1 (3.4 oz) package vanilla instant pudding mix
  • 3 cups cold milk, divided use
  • 1 (3.9 oz) package chocolate instant pudding mix
  • 2 cups whipped topping (COOL WHIP), divided use
  • 1 banana
  • 1 box graham cracker squares

  1. Line a 9 x 13-inch baking dish with foil.
  2. Line the bottom of pan with a single layer of graham crackers. (You may have to break some so they fit)
  3. In a medium-bowl, add the vanilla pudding mix with 1-1/2 cups of milk.
  4. Whisk to combine.
  5. Then fold in 1 cup of the cool whip.
  6. Pour the vanilla pudding mixture over the graham crackers.
  7. Spread out evenly.
  8. Top the vanilla pudding layer with another layer of graham crackers.
  9. In a separate bowl, add the chocolate pudding mix and remaining 1-1/2 cups of milk.
  10. Whisk to combine.
  11. Fold in the last 1 cup of cool whip.
  12. Spread the chocolate pudding mixture over the second layer of graham cracker squares.
  13. Cover pan with saran wrap, and place in the refrigerator to set at least 4 hours, or overnight.
  14. When ready to serve, slice the banana in thin slices and spread slices over the cake evenly.
  15. Crush 1 graham cracker and sprinkle crumbs over the cake.
  16. Slice and serve!
